Double Chocolate Chips Muffins Gluten Free Thermomix

Ingredients:
113g Butter (melted & cooled)
2 Large Eggs
240ml Milk + 1tbsp White Vinegar
(mix and set aside for 10mins to make buttermilk)
2tsp Vanilla Extract ( @ladameinvanilla )
230g Cassava Flour ( @ladanglima.id )
60g Cocoa Powder
240g Light Brown Sugar
1tsp Baking Powder
1tsp Baking Soda
1/2tsp Salt
130g Semi-sweet Chocolate chips (extra for sprinkles)

• Thermomix Method:

  1. Pre-heat your oven at 185’C and line 20 muffins cups.
  2. Melt the butter & let it cool for a while (Melt | 5mins | 100’C | Speed 1)
  3. Add in brown sugar (Mix | 15secs | Speed 3)
  4. Add in buttermilk, eggs, baking powder, baking soda, salt, cocoa powder & Cassava flour (Mix | 20secs | Speed 3) Note: If the flour is not well incorporated, just fold and mix well using spatula.
  5. Fold in 130g of chocolate chips using spatula.
  6. Pour the batter into 3/4 of the muffin liners and topped with more chocolate chips (you can use scoop or piping bag)
  7. Bake the muffins for 20 minutes – crusty. Serve hot 😋

⚠️Tips: It is important to combine the flour just until incorporated. Do not over-mixed the flour to avoid the texture of the muffins become hard. Muffin is not like cupcake since the texture is more light and airy.
