Double Chocolate Chips Muffins

Ingredients:

113g Butter (melted & cooled)

2 Large Eggs

240ml Milk + 1tbsp White Vinegar

(mix and set aside for 10mins to make buttermilk)

2tsp Vanilla Extract

230g Plain Flour

60g Cocoa Powder

240g Light Brown Sugar

1tsp Baking Powder

1tsp Baking Soda

1/2tsp Salt

130g Semi-sweet Chocolate chips (extra for sprinkles)

Thermomix Method:

1. Pre-heat your oven at 185’C & line 20 muffins cups.

2. Sift flour, cocoa powder, baking powder, baking soda and salt. Set aside. (Sift | Turbo mode | 2secs | 2times)

3. Melt the butter & let it cool for a while. (Melt | 5mins | 100’C | Speed 1)

4. Add in brown sugar (Mix | 15secs | Speed 3)

5. Add in buttermilk, eggs & sifted flour. (Mix | 20secs | Speed 3)

6. If the flour is not well incorporated, just fold & mix well using spatula. Fold in 130g of chocolate chips using spatula.

7. Pour the batter into 3/4 of the muffin liners & topped with more chocolate chips (you can use scoop or piping bag)

8. Bake the muffins for 20mins or until cook – crusty. Serve hot 😋

Conventional Method:

1. Preheat your oven to 185°C and line 20 muffin cups.

2. In a bowl, sift flour, cocoa powder, baking powder, baking soda and salt. Set aside.

3. In another bowl, whisk egg and brown sugar until combined. Add melted butter and vanilla. Then alternate dry ingredients (sifted flour) and buttermilk. Whisk until just combined. 

4. Fold in 130g of chocolate chips. Scoop batter into liners and top each muffin with more chocolate chips. You can use piping bag too.

5. Bake for 20 minutes or until toothpick inserted comes out clean. Remove from pan to cool on a wired rack. Serve hot!

⚠️ Tips: It is important to combine the dry and wet ingredients just until incorporated. Do not over-mixed the batter as it will crush the air bubbles and ruins the fluffy texture. Muffin is not like cupcake since the texture is more light & airy.
