Credit Recipe: Sunita Thomas
Ingredients:
- 250g all purpose flour (I used bread flour)
- 50g castor sugar
- 5g instant dry yeast
- 2 egg yolk
- 115g fresh milk (cold) – eg Dutch Lady (I used full cream milk)
- 50g butter (cold)
- 1/2 tsp salt
Thermomix Method:
- Put ingredients 1 – 5 into mixing bowl, 4 mins/Knead
- Rest in bowl – 1 min
- Add ingredient 6 and 7, 4 mins/Knead
- Divide dough into 6-8 portions equally. If making ribbon buns, divide into 16 portions (31-32g each). Rest for 15 mins
- After 15 mins, roll the dough using rolling pin. Shape the dough as you wish. For ribbon buns, watch video here : https://youtu.be/tniab4uWu6o
- Proof the dough until double in size (approx. 1 hour)
- Egg wash/fresh milk (egg wash – putih telur + air)
- Bake for 15-20 mins at 170°C until top is lightly browned. Lightly brush with melted butter after baking and dust with icing sugar
P/s: For conventional method, you can use mixer/bread maker & add on each kneading time (up to 15 -20mins) until achieving window pane
